Même s’ils suivent un nom pluriel, les noms matin et soir s’écrivent généralement au singulier, puisqu’il s’agit d’une ellipse :
- tous les lundis matin (les lundis au matin)
- tous les dimanches soir
Le pluriel est toutefois admis, mais est plus rare que l’invariabilité. Matin et soir prennent alors valeur d’adjectif et s’accordent avec le jour de la semaine :
- tous les lundis matins
- tous les dimanches soirs
